    3. My Dad used to beat the batter, then let it stand for a while, then beat it again, and repeated this a couple of times. They were always really light and mouth-watering. Guess they were helped by all that extra air he beat into them - or maybe they were just scared he'd beat them again if they didn't perform :-) Would also like to pass my best wishes to all the lucky people attending Yorksgen for the next couple of weeks. I will never forget my time there in 2010 and will definitely be back at the first opportunity. Enjoy all the resources, trips, outings, and fellow researchers.
