I also helped with the 1881 census transcription. I seem to remember being told that each set of returns were transcribed independently by two people and the results were compared by a third party. Where the transcription varied the third party then had the task of decided which transcription was correct. Obviously the original enumerator's spelling mistakes had to be transcribed as they appeared on the original census return. Maureen
