Those Allies taken prisoner in North Africa in 1941 were shipped to Italy. At a later stage they were taken by rail to various prisoners of war camps in Germany. In your case I would think the army infantry were probably taken from Crete by caique, siebel ferry or some other form of sea transport to Greece & then by rail through Yugoslavia either to Austria, Italy or maybe Germany (which was further distant).
