Most probably, Mary Elizabeth Whittington Lee was named for one of her two grandmothers, very likely with the exact same name, Mary Elizabeth Whittington. If you can identify the ancestor with the Whittington surname, then you should attempt to trace her lineage back to Grief Whittington (the patriarch of practically all Louisiana Whittingtons.) Your Whittington surnamed ancestor is very likely one of the granddaughters of Grief Whittington, perhaps one of the daughters of Elisha Whittington. Let me know what you discover.
