You could try the VT vital records. Highgate was one of the towns where I've found them to report records earlier than the typical 1850/60 cut-off. Do you know the married name? If so, check the Federal Census records for that surname in the town she is believed to have lived. Records for 1850 and 1860 contain names and ages, together with the actual day that the data was collected. By comparing data from several years, you can narrow the birth date down to a few months. The Federal Census records can be seen in Waltham MA, on Trapelo Rd. That's only an hour or so from Plymouth.
