Impossible Buttermilk Pie cooking spray 1 1/3 cup sugar 1 cup buttermilk ½ cup biscuit mix (Bisquick or Jiffy mix) 1/3 cup unsalted butter, melted 1 teas. Vanilla 3 large eggs Preheat over to 350, spray pie plate with cooking spray. Combine all ingredients in blender, blend until smooth, pour into pie plate. Do not let the hot butter come into contact with the eggs, mix it in the milk if necessary. Bake until browned and still a little jiggly (the pie will set as it cools) 30-40 minutes. Let cool before slicing. If desired, sprinkle with confectioners' sugar or cocoa before serving.
