Cornbread 1 cup Cornmeal (I use stone ground) 1 cup Flour (I use unbleached) 3 to 4 tsp Baking Powder 1/4 to 1/2 cup Sugar (depending on your taste) 1/2 tsp Salt 1 cup Milk 2 Eggs, beaten 1/4 cup melted fat or oil (I use beacon grease) but any oil would be fine. Sift cornmeal, flour, baking powder, salt and sugar together. Mix together milk, eggs and fat. Add Milk mixture to Cornmeal mixture. Stir only enough to blend. Pour a small amount of "fat or oil" in Iron skillet and heat in oven until skillet is hot. Pour your Cornbread batter into hot skillet and bake for 25 minutes or until done in a 400 degree oven.
