My wife and all of her family have a dish that they are crazy about...they call it scalded lettuce and onions.... I have never cultivated a taste for it, but understand that it is a favorite in Floyd Co. Paul keep the mail comin' to Ole Paul
Do they make it with bacon bits and grease, heated to a boil with vinegar, then poured over the lettuce? My mother used to fix this and I have never got it right. I think there really is a knack to making it. My lettuce either gets soggy, or is coated with grease. It has been many years since I even tried making it. Mom's family came out of PA. and KY. --- On Wed, 5/26/10, paul <pogoat2@webtv.net> wrote: From: paul <pogoat2@webtv.net> Subject: [VAFLOYD] Not genealogy...food... Now I love wilted lettuce - my mother always has it when the lettuce from the garden starts coming in - and my hubby likes it.. but it is just the lettuce & onion and bacon and just some of the bacon grease poured over it - enough to "wilt it" and you do have to eat soon as it is fixed as it doesn't taste that good when the grease gets cold...
