I like a cup/glass of buttermilk with cornbread crumbled into it and a few snips of onion in the glass too. Hmm Hmm Good. One meal my family loves is Pinto Beans, Fried Potatoes and Cornbread. Of course the beans have to be cooked with "fat meat" or a "ham bone" and the Cornbread has to have a bit of bacon grease added to it. WOW what a flavor??? I prepare this meal at least twice a month. There has to be onions and real butter on the table. I have a really hard time trying to stop cooking like my Mother did, but it is just to hard to change. Streaky meat. My mom is turning over in her grave. Never heard of it referred to that way. She LOVED fatback. Me..... I would rather leave the "meat" than take it, but on the greens the grease is aok. ----- Original Message ----- From: "Carolyn Bruce" <cdhbruce@cox.net> To: <vafloyd@rootsweb.com> Sent: Wednesday, January 09, 2008 9:10 AM Subject: [VAFLOYD] Kat-- streaky meat, side meat, etc. > Kat, you slice the "fat back" as we always called it, and fry it in an > iron > skillet until crisp, but don't burn it. Buttermilk was one of my mama's greatest pleasures! Instead of cake and ice cream for desert, she would often crumble up a chunk of corn bread in a bowl and cover it with cold buttermilk. I never developed a taste for it myself, but on the other hand, my mother lived to be 91 years old, so maybe I should go get some! On Jan 9, 2008 12:49 PM, B. Ms. Kat: Y'all done made me hungry! We've been out of anything salt cured for a while now, and can't get back down that way right away. Back before they discovered cholesterol, we would take the renderings from the "streaked meat", mix it with some vinegar, salt and pepper and pour it over leaf lettuce and chopped green onions. A bowl of pintos and a slug of buttered cornbread makes it a meal. Still do - about once a year. That stuff will make you sassy! We drove out of our way last September to go to Mabry Mill for breakfast - Country ham biscuits. Kat, you're in one fine part of the planet. If you've never been there, you surely want to check out Grayson Highlands State Park for a picnic - of course wait 'til summer. John in Ohio

Kat, you slice the "fat back" as we always called it, and fry it in an iron skillet until crisp, but don't burn it. Remove the meat and set it aside. Then you take your mess of kale, or turnip, or mustard, etc., that you have already boiled, and drain it well before putting it into the hot grease and fry it. Once it's done, you put it on a serving platter and crumble up the meat strips onto it, or decorate the dish with the strips. A sliced hardboiled egg or two puts some color into it, and I could just about "swaller" my tongue just thinking about it. Add a big ol' bowl of pintos sprinkled on top with chopped up onions and a hunk of corn bread oozing real butter... well, there went my tongue! This meat that I bought yesterday is already sliced up nicely and ready to cook. My hubby introduced me to the joys of "streaky meat" years ago (he has been so helpful in my country education...) Sounds funny to say that I bought my husband a couple of big hunks of fat meat as a souvenier from my trip, but he will be tickled pink. Anyone who comes up to this part of the country definitely needs to drive down to Meadows of Dan and up on the Parkway to Mabry Mill. All my life, I have just loved to visit the Mill and can NOT believe that I will be living so close. One thing I have to get used to is how the weather here can change from one county to the next. Here in Hillsville yesterday, it was cloudy, but reasonably warm and calm. As I drove down Hwy 58, however, and went up hill a thousand feet, it became foggy and windy. In Meadows of Dan, it was rainy and chilly. Drove back down to Hillsville and the sun was trying to come out. Amazing changes in just 20 miles. I went online yesterday to look at a topigraphical map of our area. Our new house sits at about 2450 feet, but the back part of the property is at 2600 feet--quite a hill (and really great view from up there.) Wait until the first good snow next winter when my Florida kids get their first chance to go sledding down THAT slope!
