I think the book should also include lots of little stories that Paul and Edgar and Clarence, etc are always telling. And some funny ramblings, and country hill jokes. I've often thought of going back through the archives just to look for all of Paul's silly sayings. And the memories you all have of the old timers, and the country stores. Buttermilk Cornbread (without Flour) & NO SUGAR a.. 2 cups corn meal (white or yellow) b.. 1-1/2 teaspoon baking powder c.. 1/2 teaspoon baking soda d.. 1 teaspoon salt e.. 1 Egg, lightly beaten f.. 1-1/2 cups buttermilk g.. 2 tablespoons melted shortening or vegetable oil Preheat oven to 450°F. Sift together the dry ingredients and set aside. Combine beaten egg, buttermilk and vegetable oil. Combine cornmeal mixture with buttermilk mixture, stirring just enough to moisten. Pour into hot, well-greased 9- or 10-inch skillet or pan, muffin tins or corn stick molds. Bake about 15 minutes for muffins or corn sticks, and 20-25 minutes for pan or skillet. Cornbread will begin to pull away from sides. Makes approximately 12 muffins, corn sticks or pieces.

Swirl the pan to make sure it is coated with melted bacon drippings, and pour the bacon drippings into the batter. Stir well to combine. Pour the batter into the pan, and bake 25 to 30 minutes. Cornbread will begin to pull away from the sides of the pan.

Cornbread 1 cup Cornmeal (I use stone ground) 1 cup Flour (I use unbleached) 3 to 4 tsp Baking Powder 1/4 to 1/2 cup Sugar (depending on your taste) 1/2 tsp Salt 1 cup Milk 2 Eggs, beaten 1/4 cup melted fat or oil (I use beacon grease) but any oil would be fine. Sift cornmeal, flour, baking powder, salt and sugar together. Mix together milk, eggs and fat. Add Milk mixture to Cornmeal mixture. Stir only enough to blend. Pour a small amount of "fat or oil" in Iron skillet and heat in oven until skillet is hot. Pour your Cornbread batter into hot skillet and bake for 25 minutes or until done in a 400 degree oven. My Mother - in - law passed away in 1998 and she never used precise measuring for the corn bread. She did try to write a recipe for me but it never turned out like hers. I remember she always got the skillet hot and she used bacon grease or other oils and she would pour the mixture of flour and cornmeal and this would be cooking before she put it in the oven. Here is the recipe, I hope you try it and enjoy it. Impossible Buttermilk Pie cooking spray 1 1/3 cup sugar 1 cup buttermilk ½ cup biscuit mix (Bisquick or Jiffy mix) 1/3 cup unsalted butter, melted 1 teas. Vanilla 3 large eggs Preheat over to 350, spray pie plate with cooking spray. Combine all ingredients in blender, blend until smooth, pour into pie plate. Do not let the hot butter come into contact with the eggs, mix it in the milk if necessary. Bake until browned and still a little jiggly (the pie will set as it cools) 30-40 minutes. Let cool before slicing. If desired, sprinkle with confectioners' sugar or cocoa before serving.
My mother died in 73 and I did not take cookin' lessins from her. What I do remember of her wondeful bread, corn and biscuits, was the buttermilk and "drippins" used in the corn bread and for neither did she do the precise measuring we do today. And the only vessel she ever used for cornbread was a very used cast iron skillet, in the oven. Biscuits formed from using a glass and of course there was always a pone, one large lump of dough not large enough for two biscuits.
