There is a great book,"Handybook for Genealogists" publshed by Everton Publlshers, that lists every county, in every state, gives what records are available in which county, dates, etc., etc. I have about worn mine out -- has so much in it! When I first got into genealogy, my old time researchers told me to buy the book! Costs about $37.00. Can be ordered from the Everton Publishers site.
