The online Handbook of Texas indicates that Joseph Baldwin died on January 13, 1899, but it doesn't indicate his burial place. From information found on the website, he may have chosen to be buried in Huntsville or perhaps in his home state of Pennsylvania. Have you tried searching for him on the USGenWeb site for Texas and also for Pennsylvania? If he rests in a cemetery that has been transcribed, you may find him. You might also try the Baldwin message board and list at Rootsweb. Good luck. R.A.
