Head cheese!!!!!!!!!! oooooooh, it's terrible..........my bunch calls it sous...........sows...........whatever it's called, it's horrid. My grandmother made polk salad w/scrambled eggs, wild onions w/scrambled eggs, head cheese and chitlins! She's even barbequed racoon. My dad said it tastes like a wet dog smells and me.............I just took his word for it! Grandma is 93 now and we still tease her make about being afraid to heat her chilli for fear of what she's made it out of!
The Yankees call head cheese scrabble. Made the same way just a different part of the USA. My husbands family is from England and emigrated to NY. and they made scrabble. My dad and two of his brothers like to hunt possum. My mother nor the two aunts would cook them. My paternal grandmother always got hung with the job. She always said the secret to cooking possum is to keep changing the apples you stuff them with, The apples tame the taste of the meat and also soak up the grease; I'll take her word for it.
