My mother cooked ham and made cornmeal dumplings too! She made her's oblong and about the size of a man's thumb. They were so good! In fact, mother came out to West Texas (from southeastern Oklahoma) when our daughter was born. She asked me what I would like for lunch a few days after I got home from the hospital. Well, no doubt about it...Ham and cornmeal dumplings! I still make them today. We called it Poke Salad in Oklahoma too!
