My AOL dictionary states the following definition for sallet: sallet (noun) : a light 15th century helmet with or without a visor and with a projection over the neck Doesn't sound like a green leafy wild vegetable to me??? I think it is correct to call it Salad.
I am from Texas and I have always called it Poke Salad.
Warriors sometimes have to use their helmet to prepare a meal. Poke something from the bushes in you sallet, mix it up, wala, Poke Sallet Salad. This all of a sudden reminds me of a 50s song, "Poke Sallett (Salad) Annie". The Yankees call head cheese scrabble. Made the same way just a different part of the USA. My husbands family is from England and emigrated to NY. and they made scrabble. My dad and two of his brothers like to hunt possum. My mother nor the two aunts would cook them. My paternal grandmother always got hung with the job. She always said the secret to cooking possum is to keep changing the apples you stuff them with, The apples tame the taste of the meat and also soak up the grease; I'll take her word for it. Don't care for wild meat any more as I was raised on it. ----- Original Message ----- From: <[email protected]> To: <[email protected]> Sent: Saturday, August 06, 2005 10:14 PM Subject: Re: [TXREDRIV] Poke Weed (and other names) > Head cheese!!!!!!!!!! oooooooh, it's terrible..........my bunch calls it > sous...........sows...........whatever it's called, it's horrid. > > My grandmother made polk salad w/scrambled eggs, wild onions w/scrambled > eggs, head cheese and chitlins! I am going to guess, that it depends on who you are talking to. Like you, I always thought it was salad, but lately I have heard it called Sallet, so I just guess it is who is doing the talking. Many years ago, I was living in Seguin, Tx. and every morning on a San Antonio Radio station there was a fellow named Charlie Walker that was formerly from McKinney, Tex, that called himself, among several other names, Polk Salad eating Charlie Walker. He died a few years ago in Nashville, Tenn. Sam Paris ----- Original Message ----- From: "Cathy E. For any one concerned, Bunky Smith lives near the Kerbow Lake at Fulbright, and on the North side of the lake, Bunky has a small Pine grove that is completely run-over with Poke, Polk or what ever you want to call it, and everyone has always been welcome to help themselves. Can even pick in the shade> Sam Paris
Hey, how come you folks down in TX. call it polk weed? We folk up here in OK. call it polk salad and scramble it with eggs. My daddy always liked the pigs knuckles and head cheese. Couldn't handle either of them or the polk. Don't care for cooked greens of any description. Researching in Red River Co. TX. Suggs, Hogland, Daggs, Lisenby & Pierce & connecting families. Bye y'all. Can't go the polk salad with eggs or anything else..........but wild onions and eggs!!!! awesome!
We ate that mustard greens salad that Sam described when I was a kid. Only we put some leaf lettuce in with it. I still put fresh mustard greens in my lettuce salads. Just enouth to give it a tangy flavor. ----- Original Message ----- From: "Mary Butler" <[email protected]> To: <[email protected]> Sent: Saturday, August 06, 2005 4:39 PM Subject: Re: [TXREDRIV] Poke Weed (and other names) Sam, I had never heard of another family eating mustard greens, green onions, radish, and bacon before. I have wild onions growing all over the place in the spring and sure do like them . I don't add eggs to either poke or onions but I know lots of folks like them that way. Wild onions go good mixed into a skillet of fried potatoes, too. Nothin' like good ol' southern cookin' to warm the heart and harden the arteries. <grin> Sharon ----- Original Message ----- From: <[email protected]> To: <[email protected]> Sent: Saturday, August 06, 2005 4:31 PM Subject: Re: [TXREDRIV] Poke Weed (and other names) Can't go the polk salad with eggs or anything else..........but wild onions and eggs!!!! awesome! ==== TXREDRIV Mailing List ==== ============================== Find your ancestors in the Birth, Marriage and Death Records. Sharon, just wanted to add just a bit. A Dr. Meer's, who was a Detroit long ago, and in fact buried in his private plot across the road from the Detroit cemetery, would teaseling tell my folks that if they would feed us kids two messes of polk in the spring, then he would take care of us in the fall. Sam, I had never heard of another family eating mustard greens, green onions, radish, and bacon before. We ate that all the time I was growing up; I still love it. Mary now in Oklahoma sam embrey <[email protected]> wrote: Sharon, just wanted to add just a bit. A Dr. Meer's, who was a Detroit long ago, and in fact buried in his private plot across the road from the Detroit cemetery, would teaseling tell my folks that if they would feed us kids two messes of polk in the spring, then he would take care of us in the fall. I remember my wife liked wilted salad where she cut up mustard greens, chopped green onions and diced radishes, then fry bacon real crisp, then break it up in the salad, and pour the hot bacon drippings over it all. Well, one time, she like a few mustard greens having enough for her salad, so she used a little poke. My daughter missed one week of school, and I missed a week of caring mail. Oh yes, my mother would cook her polk salad, then when it was done, mix some eggs in it, and scramble the eggs in the polk. We thought it very good. John and all, The reason for straining the poke greens and discarding the "first" boiling water is to reduce the laxitive effect of poke. Also, one should never eat the raw greens in a salad. Even a small amount will act as a REALLY strong laxitive and I expect a large amount might indeed be called poison. I've had a few plants come up on my place but not enough to make a "mess a' greens". The leaves are course unless picked when they are young and small, but poke has the texture of spinach when it's picked young. We canned it one year when we had moved and didn't get an early garden of mustard and turnips planted. It was growing abundently near our house in Bagwell so Mama and I gathered it in tow sacks, washed it in galvinized wash tubs in the back yard near the cistern and used the pressure cooker to put up a whole lot of it. Lotta work but really good with pinto beans, fried 'taters and cornbread. Sharon Black
