Work into butter and cream mixture enough powdered sugar to make consistency of stiff icing. Form icing in rounds on chocolate squares. Insert whole pecans into icing. - Mabel Lewis *************** Chinese Chews 1 Cup granulated sugar 1 cup chopped dates 3/4 cup flour 1 cup chopped walnuts 1 tsp baking powder 1 tsp. vanilla 2 eggs 1/2 cup powdered sugar Sift into mixing bowl the granulated sugar, flour, baking powder, and salt. Beat eggs, add vanilla. Add this to dry ingredients. Mix well. Add dates and walnuts. Mix thoroughly. Spead mixture on oiled baking sheets and bake 30 minutes at 350 degrees. While hot cut in small squares or sticks. Put powdered sugar into paper bag. Drop in several squared at a time. Close and give the bag one shake. Remove these and repeat operation until all are rolled in sugar. Makes 2 and one-half dozen chews. -Kate Denning pg. 33 Sand Tarts 1 cup butter 2 tsp vanilla 6 tbsp. powdered sugar 1 cup ground pecans or 2 tsp. water almonds 5 drops almond extract 2 cups cake flour Procedure, Cream butter until light and fluffy. Add sugar and cream well. Add extract to water and alternate with water. Add ground nuts, work well. Pinch off small balls of dough and roll into strips 3 or 4 inches long and lay on cooky tins in the shape of horse shoe. Bake 10 to 12 minutes in 300 degree oven. Add 1 egg beaten whole. Add one-half teaspoon soda with 1 and one-eighth cups flour and one-half teaspoon salt mixed together. Add few drops hot water. Mix until well blended. Add one-half cup nuts and contents of chocolate chip bag. Drop by one-half teasponn on greased cookie sheet. Bake 10-12 minutes in 375 degree oven. makes 50. -Norma Morrow pg 34 Cocoanut Squares 1/2 cup butter 1/2 cup brown sugar 1 cup flour Mix well and pack in square pan (8x13 in.). Bake 10 minutes 350 degrees F. Mix: 1 cup brown sugar 1 cup nuts 2 eggs 3 tbsp. flour 1 tsp. vanilla 1/2 tsp. salt Pour over 1st mixture and return to oven bake 20 minutes longer. One cup nuts, two cups brown sugar, one pound gum drops cut in 8ths. Mix well. Add 4 eggs beaten with one tablespoon cold water. Pour in thin sheet and bake 325 degrees for 30 to 40 minutes. Cut in squares and dush with powdered sugar. -Opal (Speed) Taylor ************** Spice Cookies 1 cup shortening 1 tsp. soda 2 cups sugar 1 tsp. cloves 2 eggs 1 tsp. nutmeg 1/3 cup sour cream 2 tsp. cinnamon 1 tsp. vanilla 1/4 tsp. salt 3 2/3 cups flour Cream shortening and sugar. Beat in eggs and cream. Add vanilla. Sift flour before measuring. Then combine all dry ingredients and sift into the creamed mixture. Mix lightly and drop portions from tip of spoon onto a greased baking sheet. Allow room for speading.
