I can't tell too much just looking at the images -- but to me it looks like someone "anglecized" the name -- taking his original French name and turning it into one that is easier for an American to pronounce. The family looks to be definitely french -- at least the husband and wife, judging from the birth information of them and their parents. Since the son John was born in Louisiana, which is/was a French stronghold, having been French posession in the 1800's, I would guess that the family came to Texas by way of Louisiana.
