In Tennessee, there were no birth or death records recorded until in the 1900s. You don't know how we wish there were. Her death record may have her father's name on it. Check death certificates of her siblings too, assuming they had the same father, which I'm sure you know, may not be a valid assumption. She was the last of 5 illegitimate children, so perhaps she was recorded under her birth father's name. Census records show her as Elizabeth but family always called her Amanda.
