    3. My grandmother Margaret Irene McLain gave me this basic 2 Egg Recipe in 1964 when I married.She used it for every cake she cooked. Basic 2 Egg Cake 1cup melted butter 2 Eggs 3 cups self rising flour 1 cup milk 2 cups sugar 1 talp,vanilla Coconut Cake Use Basic Cake Recipe Bake 30-35 minutes in 350 degrees oven in 2 well greased,floured round pans For Icing get one fresh coconut and take a big nail & hammer the nail in the eyes of the coconut.Drain the milk in a glass.Crack the coconut .Cut coconut from outer shell,then peel that black inner skin off.Grade on hand grader til fine.{ My grandmother died in 1970.My Mother & I did it this way until 2 years ago.] Now instead of hand grating,I stick it in the food processor. When cake is cool.poke holes in the layers and pour the coconut milk in the layers. 7 minute Icing 2 cups sugar 1/2 cup water 3 egg whites Beat eggs till stiff peaks form Cook sugar,water, until you hold the spoon up and see a sugar hair string from it or a small amount dropped in cup of cold water leaves a hard ball.Pour slowly into beaten eggs beating all the time till icing is stiff.Ice bottom layer,then put graded coconut on top.Same with top layer.Pat coconut onto iced sides of cake.This cake freezes well.Really is better if frozen a few days in advance. Orange Cake. Use 2 Egg Recipe Use Icing recipe except add grated orange rind to sugar syrup before you cook it.This makes your Icing that Orange Color.Peel an orange and take the skin off the orange sections.Poke holes in the cake with wooden spoon handle,Put Fresh Orange juice in the holes in the cake. Ice cake with 7 min.Icing,.Put orange slices between layers and on top of cake
