    3. Red Eye gravy is simply the grease you fry salty country ham in.Scrape any meat loose stuck to the bottom of the iron skillet.Pour in about a half a cup of coffee.You have red eye gravy or a bowl of grease with the flavor of coffee that is not good for your heart.

    3. The way I have always seen red eye gravy made is to fry ham in a heavy skillet. Remove the ham and scrape any meat loose in the bottom. Add lard or butter, and flour, to the grease to make a roux. Thin with water, or milk, if you want a cream style gravy. Simmer with a little ham bone , if available. Add a little pepper. Serve with the ham, bisquits, or on rice or grits, or just a piece of bread. Lately, I have heard that some people add a little coffee to it, I imagine at the stage where water is added. My grandmother came from Tennessee to Texas, but folks in Texas make it, too. I always associated it with cowboys or country cooking. Maybe it's not really so good for you, but I'm beginning that all the real stuff we used to have, like milk with cream, eggs, real butter, etc. were a lot better for us than the diluted, chemical filled stuff we get in stores today. My ancestors lived into their mid 90s, with few health problems, and they ate hearty ! My grandmother said a lot of the stuff we have today as "healthy food" is what they threw out for the chickens because it wasn't fit for human consumption. Had not heard of frog eye gravy. Chocolate gravy does sound like a treat, like syrup and biscuits. Actually chocolate and pop corn or potato chips are good too!
