Thank you to George Pickering, Nivard Ovington and Andrew Jolly for their answer to my query. It looked like Stone Drawer to me but I never gave a thought to it being correct. I kept thinking of Stone Dresser if their was such an occupation. You have all been very helpful.
You have dredged up a perfectly correct term! They are different ends of the business - the stone drawer pulls it out of the quarry, the stone dresser finishes it off, making smart, accurately cut and finished cubes (or whatever!) for building or statuary purposes.
