    3. Hi Stewart`s/Stuart`s, I thought I`d share a recipe that I have been making for years. As you all know I live in El Salvador, but we celebrate big time every year. I have a recipe for a Sweet potato souffle that the people here love, they beg for me to make it every year, Here goes. 6 large sweet potato`s or 6 pounds. 2 large ripe bananas`s with the peel on 8 oz. of pure maple syrup 1/2 cup butter 1/2 teas. of pumpkin spice 1/2 teas. of cinnamon 2 cups of pecan`s chopped 1 stick of butter 1/3 cup of dark brown sugar bake sweet potato`s in a 450 degree oven, 15 minutes before done, throw in the 2 banana`s with the skins on. When that is done, peel all and put in large bowl. Mix with an electric mixer until pureed. Put in spices, 1/2 cup of the butter and the 8 oz of maple syrup. Butter a Pyrex or whatever you want to bake in. Pour that in. Saute the 2 cups of chopped pecan`s in a pan, take off hit and add the 1/3 cup brown sugar. Put the brown sugar- pecan topping over the sweet potato mixture and bake at 350 until bubbly. Serve hot. Enjoy. Teresa Stuart de Rios __________________________________ Yahoo!
