hello all..... I wasn't thinking of the crockpot...... I actually invested in one and it's a big one. Hubby likes meatballs but doc said lay off the red meat so that's out. I am going to attempt soup in that thing today. I love homemade veggie soup...... there's about a kazillion different delicious and healthy veggies that can go in. I like a good sammach.....no meat.....but pile on anything else w/mayo and I'm pretty happy. I cook for the weekends - sometimes. Hubby gets a large healthy lunch cuz his hours are long and supper comes late so it is light. I don't like store canned goods either but sometimes that's a "have to"..... depending on what's available fresh..... today it was green beans and asparagus. A night time meal might be: asparagus, sweet tater, chicken sammach. Biscuits / gravy are reserved for special times...... otherwise my a** would be bigger than it all ready is and that is scarey! I'll do a meatloaf now and then..... lasagna.! ......p izza from scratch...... chiggen/dumplins...... but not regular.
