When sweet potatoes are first dug out of the ground they aren't too sweet...you gotta let them set a couple weeks or more ...at least that's what they do around here...You also have to cut the vines off before frost or it will travel down the vines and ruin the sweet potatoes...Kinda wicks the black ruin down into the ground....We used to raise a mort of those tasty tubers, and I well remember Mama baking her old black biscuit pans full in the wood stoves oven.
