    3. Paulette...the old grocery stores got cheese shaped in a large "round wheel" called a hoop of cheese. It came in a round wooden box with a fitted lid. I still have one stamped with T.U.Crumpton" (The store where I worked for two years after school and on Saturdays.) The hoop of cheese, was covered with a thick red covering that held the oils inside and kept it from drying out...It was placed on the counter on a black iron "lazy Susan" looking holder with a cover too...The cover was removed, and the knife that was 'fixed' onto the bottom of the holder was raided and brought down, to cut into the desired amount.(cut through the covering which was always left on until eaten) Like a "wedge" of cheese. The measurements were on the turntable that held the cheese, up to a lb. I remember the store I worked in in the late forties...had one...and the men all came in from road work crews and got a small box of "soda" crackers, and a cut of cheese...usually 5 cents worth, a can or two of sardines, and a big RC drink(Rotal Crown), and sat on the ground under a tree for lunch. That was the norm for lunch...or add a chunk of bologna, that came in a big roll. .
