Sometimes I don't know why I do what I do when cooking, but it just seemed like a little thickening would make it more like regular dressing, and stick to the leaves....I also make a low cal salad dressing type deal with just vinegar, water, salt , pepper and sugar to taste. IT reminds me of wilted lettuce just a bit...No oil....Could use sweetener....Can't get much more low cal than that....
