My dad used canned milk, Sego milk. Yep, he punched two holes with an ice pick, but I think he kept it in the refrigerator, not on the table. We lived in southern Calif so I'm sure it would have spoiled if it had been left out. Mama cooked with canned milk too. My husband gave me strict orders to not cook with canned milk, that he could taste it and he didn't like it. Once in a while I would use canned milk but never said anything. While he was eating, he would say "you used canned milk didn't you" and I would have to confess. He really could taste it in the gravy. And like you said, we used a lot of gravy back then. Gravy over biscuits, over fried potatoes, gravy over just about anything. I made some gravy last week and felt guilty, but sure enough, I started gaining weight, just that fast. So no more gravy for me for a while.
