I made a simple fruit cobbler at my Mother in Laws one summer and her granddaughter Phyllis from Calif. thought it was wonderful, and took the recipe home with her. She was caretaker for an elderly woman and made that fruit cobbler for her...Well, she wanted it every day, so soon Phyllis couldn't lift her and she had to quit making that cobbler ! Heres the recipe... Easy Fruit Cobbler Melt a stick of butter in a 9x13 pan...heat up a can of peaches, etc....Set aside...Mix together a cup of sugar, a cup of flour, a cup of milk, a little vanilla and one or two eggs....Pour in the melted butter, spoon fruit on top. The recipe says not to stir but I do, just enough to mix the fruit sort of evenly....Bake at 350 for about 45 minutes or till brown on top...Fruit will have swapped places with the batter and it will have a cake like deal on top...MY FAVORITE ? Heat up a large can of crushed pineapple...Add 2 or even 3 eggs to the batter...It will have a custardy texture...and is VERY good....Most folks use canned peaches.....
