Wine is a LOT easier to make than 'shine. If you process the wine twice it'll be the alcohol content of brandy so will have a kick to it. When I was working, a friend & myself decided to make some wine & brandy. We went to this store where we got all the ingredients to make the hooch (sp). She spent quite a bit of money on apricots b/c she wanted apricot brandy. We also made kalula (sp) as well as some different kinds of wines. Left the big bottles sitting on a shelf in a dark place of our basement. Around a month later, the brandy exploded & made a real mess. My husband wasn't too happy about that. I found it amusing only b/c my friend had spent so much on the apricots...IMHO, it wasn't necessary to spend the money that she did. Most of the other "hooch" turned out okay. The kalula (sp) was the easiest to make. I like kalula (sp) & I think Paula would too b/c it's a lot like coffee & tastes much like it...mainly b/c you used so much coffee in my recipe. Never made anything like that again.
