I fry some bacon and pour off almost all the grease for later use...Drain the bacon on paper towels...I pour some water in the skillet and mix in enough flour to make a very thin 'gravy.'..then I add salt and pepper, sugar and white vinegar to taste.....Keep tasting till you get it right...Heat and pour over the prepared greens..crumble on the bacon...eat right away..... Mama was like most cooks in her day...just poured the hot bacon grease on the greens, and that was it....That 'wilted' it , for sure....I like my version better, and it's surely better for you, calorie wise....Hope it turns out tasting to suit you ! 3. Back in 1970 we moved to the country in central Oregon. We had an irrigation pond just down the hill and the frogs would do their croaking every night. I was a city girl and not used to the sounds of the country. Those frogs and whatever else chimed in would keep me awake for a lot of nights. But when I left there and moved back to the city, I missed my country sounds. I had gotten used to them and they would lull me to sleep. On warm summer nights you can hear the frogs croaking in the side ditches and down in the shallow pond among the cattails...Listening to the wee peepers and the 'belly deep' croak of the bull frogs is one of my favorite memories. It seems like they all croak in their own key, making up a wonderful country chorus , with Katydids , crickets and other bugs adding courting calls in the background ...Lightning bugs flicker down in the pasture signaling to their mates hidden in the tall weeds and grass..and June bugs keep banging against the screen trying to get to the lamplight...Till the cats catch and eat them.... 3. My dad used canned milk, Sego milk. Yep, he punched two holes with an ice pick, but I think he kept it in the refrigerator, not on the table. We lived in southern Calif so I'm sure it would have spoiled if it had been left out. Mama cooked with canned milk too. My husband gave me strict orders to not cook with canned milk, that he could taste it and he didn't like it. Once in a while I would use canned milk but never said anything. While he was eating, he would say "you used canned milk didn't you" and I would have to confess. He really could taste it in the gravy. And like you said, we used a lot of gravy back then. Gravy over biscuits, over fried potatoes, gravy over just about anything. I made some gravy last week and felt guilty, but sure enough, I started gaining weight, just that fast. So no more gravy for me for a while. Never knew of it spoiling...In later years my thrifty ex Mother in law would pour a small can of Pet milk into a quart milk bottle then fill it up with water to use in coffee...this was refrigerated between uses.... 2. Peace Roses
    3. My parents raised chickens and I had to gather the eggs too. I didn't like putting my hand under the hen to get the eggs. I was always afraid she would peck me. We had a mean rooster too. Mama would even have to have a stick in her hands to fight him off at times. He finally ended up in the stew pot. They would usually buy 25 chicks at a time. When they brought them home they would keep the box in the kitchen for a few days before putting them into the incubator outside the back door. At times I thought about buying a few chickens but I knew some of the problems that Mom and Dad had and I decided I didn't want to learn that much about raising chickens so I bought mine from the meat dept. Talking about the sex of a chicken, on "Dirty Jobs" one night Mike Rowe was working in a hatchery and his job was to separate the male chicks from the female chicks. They showed him what to look for to tell the sex. I never knew that before. That was interesting. 3. well today the Supreme Court ruled that a child r**ist can not be executed. Tomorrow we will hear their decision on gun control. Let's hope we're not going to loose our right to bear arms.... oh me oh my. Recently I saw a man with a t-shirt that said: I am an angry white person clinging to my guns and my God. Apparently he didn't like the statement made by Obama claiming this of white conservatives. Just let me sneak this in too (in case someone hasn't heard the statement)...... Obama justifies his vote FOR partial-birth abortion by saying that it would go against the bible to vote against it.... HUH??? His reasoning is that everyone doesn't interpret the bible in the same way so to fvote against this would be unbiblical. when someone figgers out what he meant, let me know - I'm stymied. paulette in sw fla usa..... 3. Hello, I am still kicking but inside!!! It was 81 at 6:30 this AM...they say 30% chance of a thunderstorm today...sure hope we get it. Who would think we have to hope for a thunderstorm??/ But the hail that is falling this year is really something. I think there has been more already this year than I saw in my whole life in the country. I may be called "crazy' by all these crazies that are running things but I think all this space exploration that has zoomed through to outer space and back so much with all the radioactive material...the gases etc. I heard them say the other day, when the shuttle has to sit , an hour or so, before anyone disembarks or anyone goes near it...for any gasses to escape...escape to where??? In to our atmosphere!!! and if there are holes in the ozone....who is making them? All the pollution flying around in orbit would shock us if we could see it, I am sure. Oh well...it is just that we lived a lot of centuries...just reading how the earth was prepared for human life...(in Genesis) why can't we let Him be in charge if another planet is needed, he will know before we do, to provide it, I think we need to concentrate on what is happening on this one, first, But back when I was a kid...we lived in the sun, all day...now it is very harmful, even for a few minutes...Who opened up all those screens? Man's pollution,. I hope all who need rain on your gardens, gets it. I heard where 7 inches fell where it was not needed last night. More water problems for those poor people living close to the Mississippi (some not so close) Ya'll stay cool, ya hear? Stella

    3. Bending over seems to be a thing of the past for lots of us'ns..... my neighbor bought a fridge with the freezer on the bottom so she could sit in her rolling chair and get stuff out of the fridge part without having to bend over......do ya think that's why we're now seeing so many of the fridges with the freezer on the bottom? paulette in sw fla usa well, for one thing - we likely won't have to worry about opening the fridge and bending over cuz we're not going to be able to afford any food to put inside!!! 3. let me tell ya,,,,, if we could find somewhere to go we'd be gone!! The humidity is a killer diller, let me tell you. I saw yesterday it was a wonderful 76 degrees in Chicagoland - made me homesick, fer shure. Lots of times I long for a taste, a morsel, of COLD air. Was talking to a neighbor (new to SW Fla) about the hurricanes...he said he would just leave if we have a threat but the problem there is that ya just can't tell which way those storms are gonna go!! Have known people that evacuated, the storm turned, and they ended up worse off than if they had stayed. From the sound of things - no one is safe from Mother Nature no matter where they live. Hope your friends are having a better time in KY - what a beautiful area they live in now. paulette in sw fla usa workin' up a good sweat just tappin' on the pc..... Seems things are the same all over the U.S. and is there any light at the end of the tunnel ? I think NOT...doubtful we will live to see it. I am also concerned about my chittlin' - how will he survive in his old age - if he even has an old age! 3. Smootchie, We have the heat too but not the humidity. That makes it bearable. My friends who had lived on their yacht for several years at Merritt Island said they couldn't handle anyy more storms , so they sold and bought a home in Bowling Green, Kentucky. Acouple of years ago they had onsiderable problems with the hurricane, they were found floating around in one of their small boats. I hope you don't have any problems with the storms this season. They can certainly be scary and cause a lot of problems.
