This is because 'Mac' means son of, and therefore they sometimes take the 'mac' off the front of the name and replace it with a 'son' at the end. In fact, one of the Wigtown Martyrs is known by both surnames. I also found my 5th great grandmother (Marron McLachlan)'s marriage recorded at Penninghame, Wigtownshire and it said "Joseph Gracie and Marron Lachlison in Meikle Ingelston, New Abbey".
