in many cases the trade directories can fill the gap. If you post your ancestors name and occupation (and other known addresses) to the list someone might be able to find them for you. There ARE street indexes for all these censuses. Eg if you find a family in George St, the index tells you exactly which part of which film has the folios for that street. I have advertised for these people on the list in the past but with no luck. As I mentioned I found them on the 1851 and 1881 & 91 census so I have decided to try and follow them through on all the census. They were Catholic Apostolic so they aren't in the IGI and they had all their children before civil registation began in 1855 so I haven't had much luck there either.
