Hi! I also work at an LDS Family History Center. We have the complete 1881 Census on CD at the Center and it can be purchased privately by logging on to familysearch.org I have found that the records for Scotland are very good as you can order OPR (Old Parochial Registers) and Census records on microfilm through your local FHC for every parish. We also have all the Birth, Marriage and Death Indexes on microfilm from 1855 when Civil Registration began into the 1900's. To find out what microfilm to order, you may check the Family History Library Catalog at the FHC or log on to familysearch.org and check the catalog there. Good luck.
