I don't think even the people here will come up with "the correct" answer to this! Do what makes sense to you! They are e-mails, so you can keep the e-mails, save the e-mails in some other format, copy the e-mails, summarize, re-write, or excerpt or some combination thereof. I know there is a "correct" method of citing a bunch of e-mails from one person spanning a bunch of dates. I've never paid attention to what it is since I usually just make sure that the reader clearly understands where I got the information, and I put sources in my notes. Whatever else you do, though, don't throw out the e-mails - no matter what you think of them. Posterity will get a lot out of reading them.
