If you're using Evernote, and all of your notes are in synced notebooks, then you don't need to copy the notes to an external device. They already exist as a copy in the cloud, and when you then install Evernote on your PC under Windows 7, they should automatically download to your PC. If you're not sure that all your notes are in the cloud, just go to evernote.com, sign in with your Evernote ID and password, and see if a copy of your notes is there.
