Johnny Cakes 1 cup white stone-ground corn meal 1 teaspoon salt 1 cup boiling water 1/4 cup milk Put the cornmeal and salt into a bowl. Add boiling water in a slow steady stream, while stirring constantly. Do not let it lump. Sitr in the milk to make a thickish batter that "plops" off the spoon. Heat an iron skillet or griddle. When a drop of water sizzles on it brush it with fat (I use brush on oil). Drop by mixing spoonfuls. Turn when browned. They need to cook longer than pancakes.
