Approximately 55 years ago my mom made a "batch" of yellow corn hominy. It was shelled yellow field corn that was boiled (or something) for some period of time and I believe that wood ashes may have been in the kettle or pot. Seems that the ashes were helpful in removing the hull(?) from the kernel. I do not remember if the hominy tasted good; but I buy a can of "store-bought" on occasion. Wife won't eat it, but it's different and I eat it just because. Yes, I'm "into" doing some things that older Queens did decades ago, and maybe some to this very day. Hope so, anyway. Anyone know exactly how to make hominy? Doesn't have to taste like Del Monte, or whatever, but must be real hominy. Thanks, Gene
We made hominy a few years ago. To my best memory you pretty much have it down pat. We rubbed it through our hands to help take the hull off. Then rinsed it many times. It was better than store bought. But things you do yourself are always better. I am happy to say I enjoy the old ways. I am willing to learn most of them. We made molasses last year. I cooked for my first time and I really enjoyed it. We have taken it to someone for the last 3 years. I had a cousin that stayed with me and taught me. He had not cooked for 45 years.
