Keep in mind that what happened in the U.S. is not necessarily what happened in Poland. In Poland it was and is fairly easy to check whose someone parents were. The baptismal records are right there in the same parish as the marriage. In the U.S. often people didn't/don't marry in the same church as their baptism. I've seen this before in at least one other old marriage record (from the US), for which the person put down "unknown" for mother's maiden name. I'd be interested to know if others on the list have had similar experiences.
