You will only know their religious affiliation after you search for records in Poland. If they came to the US (not sure where you are), they may have Jewish names on the manifests. If not, they may have Christian names. The manifest will tell you if they were Polish or Yiddish. They may have converted to Roman Catholic, but conjecture will not determine that. Have you tried finding records in Poland? Knowing where they lived will determine in what parish or administrative district they lived. The LDS have Polish parish records on microfilm.
