    3. This recipe is no longer made by anyone in our family. It is NOT very good! We long ago substituted another lebkuchen recipe for this one. But I promised the originals, so here it is: LEBKUCHEN - original recipe from Germany Recipe By : Susan Elizabeth Hodem, Elizabeth Emrich Schertzer, etc. Categories : Christmas Baking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup molasses -- heat together with 1/2 cup milk 2 cups sugar 4 whole eggs 1 lb. unskinned almonds -- grind fine with: 1/4 lb. citron -- set aside 1 Tablespoon buttermilk 2 teaspoons baking soda 4 cups flour or less 2 teaspoons ginger 1 teaspoon allspice 1 teaspoon cloves 1 teaspoon salt Beat sugar and eggs together for about 5 minutes. When molasses and sweet milk are warm, put buttermilk over the baking soda, stir and add to warmed molasses. Then add it to sugar/eggs SLOWLY. Now gradually add citron and nuts that have been finely ground. Remove from mixer and add flour, salt and spices to make a fairly stiff dough. Set in a cool place to ferment overnight or about 12 hours. Next day, spread 1/2 of the cookie dough thinly into a non-stick jelly roll type pan (cookie sheet with four 3/4" to 1" sides). (This recipe is probably enough to make 2 full sheets!) Bake at 350°F, for about 10-20 minutes. Top will puff up, sink back down and brown. Ice immediately with 10X sugar mixed with milk, lemon juice or water. You may add vanilla to icing if you use milk or water. Thinly ice entire top. Cut into squares. This will keep for a LONG time. That's why it is called Lebkuchen! Freezes well. - - - - - - - - - - - - - - - - - - NOTES : This recipe is NOT very good. My family - about 4 generations ago - gave up this lebkuchen and slipped in a ringer! If you do decide to try it, may I suggest 1/2 batch - so you will waste less ingredients! If anyone wants it, I will send the "ringer" recipe for lebkuchen. It is quite similar, but uses honey rather than molasses, and uses no milk.
