Here's my recipe: 8-10 medium red potatoes, cooked and cooled, then peeled and sliced 1/2 lb. diced bacon 1 onion, diced 1 T. flour 1/4 cup cider vinegar 1/4 cup tarragon vinegar 1/2 cup water 1-2 t. salt pepper to taste 1 1/2 T. sugar Fry bacon until crisp. Drain, reserving 1/4 cup bacon fat. Add bacon to sliced potatoes. Saute onion in fat until tender. Sprinkle with flour. Mix water, vinegar and seasonings. Add gradually to fat. Cook and stir over low heat until thickened. Pour over potato and bacon mixture, tossing lightly to blend all ingredients. Heat in 350 degree oven 1/2 hr. before serving. Potatoes will absorb all the other flavors if the dish is allowed to stand for awhile before heating. Great for those covered dish occasions because everything can be done ahead, then heated just before serving. Bonnie
