My recipe is a little more generic. My ggrandmother, who came here from Germany taught my Mom how to make this. Since they both cook by "feel", I had to have Mom make it and then measure out everything before she put it in. 5# potatoes 1# bacon Cornstarch Water Onion Cook potatoes in the skins, when done, peel right away and slice (this takes hotpads and paper towels to accomlish). As you slice them put them back in the original pan, sprinkling raw onion, salt and pepper on them and putting the lid back on to keep the potatoes hot (cooks the onion just right). When finished with all those potatoes, let sit for awhile while you fry up the bacon which has been sliced. Save about 1/4 cup of the bacon grease, mix the cornstarch and water. Add some water to the bacon grease, it's a guess and by God thing, then add the cornstarch and water, cooking and adding cornstarch/water until the mixture comes off the sides of the pan as you stir. Then pour over the potato/onion mixture. I tried many recipes, tasted many potato salads and only one other matched this one, that was a small German restaurant in Green Bay, WI. Beth
