George Frederick: Dutch Hot Potato Salad: 10 potatoes 1 onion 2 slices bacon 2 T vinegar 1/2 t. salt Boil potatoes in skin, which remove when cold. Dice or slice them, add sliced onion. Then dice the bacon and fry the pieces crisp. Add the vinegar and salt. Pour this over the potato, mix, and serve hot. Perkiomen Hot Potato Salad: 4 potatoes 1 t. sugar 3 eggs 1 t. celery seed 1 c. vinegar salt and pepper 1 cucumber i onion Boil the potatoes, let cool, pare and dice. Heat the yolks of the eggs, add salt and pepper and sugar and celery seed. Put on fire and stir until it comes to a boil. Then let cool. Dice the onion and cucumber and add, then pour on the vinegar. Ruth Berolzheimer, 1971: Savory Ham Pie: 3 T. chopped onion 1 1/3 c. milk 1/4 c. chopped green pepper 1 1/2 c. diced cooked ham 1/4 c. fat 1 T. lemon juice 6 T. flour 1 recipe biscuit dough 1 (10 1/2 oz) can condensed chicken soup Saute onion and green pepper in fat, stir in flour, add soup and milk and cook until thickened. Add ham and lemon juice, mix and pour into greased baking dish. Roll out biscuit dough on floured board, cut with biscuit cutter and arrange on top of ham mixture.
