Sand Tarts: from the cookbook, "Rehoboth Presbyterian Church Cooks Up a 200th Anniversary," 1977: 2 c. butter 1 egg white, slightly beaten 2 1/2 c. sugar 1/2 c. sugar 2 eggs, well beaten 2 t. ground cinnamon 4 c. flour pecan halves, cut in half Cream butter until soft. Add sugar gradually, creaming until fluffy. Add the eggs in thirds, beating after each addition. Add the flour in fourths, mixing well after each addition. Chill dough overnight. Using a small amount of dough at a time, roll to 1/16 inch thickness on lightly floured surface and cut into 2 inch rounds. Brush cookies with beaten egg white. Sprinkle with mixture of cinnamon and sugar. Press a pecan into the center of each cookie. Transfer to cookie sheets. Bake at 350 degrees for about 9 min. Makes about 17-18 dozen.
