The History of WALDORF SALAD Waldorf salad [WAWL-dorf] Created at New York's Waldorf-Astoria Hotel in 1896 not by a chef but by the maître d'hôtel, (dining room manager) Oscar Tschirky, the Waldorf salad was an instant success. The original version of this salad contained only apples, celery and mayonnaise. Chopped walnuts later became an integral part of the dish. Waldorf salad is usually served on top of a bed of lettuce. We always add halfed grapes as well. . WALDORF SALAD as an ENTREE Add a meat like Strips of Chicken Breast , Turkey , Smoked Turkey, Cubed smoked pork loin, or Grilled Salmon. For example if you have a salmon BBQ and have left overs, you can flake on top of the Waldorf salad , or lightly toss and make a nice entree.
Waldorf Salad 3 or 4 apples, unpeeled, cut from the core, and chopped into bite size pieces (about 3 cups) 1 tablespoon lemon juice 1/3 cup raisins 2/3 cup chopped celery 1/3 cup walnuts (optional) 1/3 cup mayonnaise Don't bother peeling the apples unless their skins are really unattractive. Cut up 3 or 4 of them, until you get about 2-1/2 or 3 cups of chopped apples. Sprinkle the lemon juice over the apples. The acid in the lemon juice prevents the apples from turning brown. Chop up the celery, it should take about 2 stalks or so. I add black walnuts because I get them for free, but you can use regular walnuts or omit them completely if you don't have any handy. Mix everything together in a medium sized bowl with the mayonnaise, coating all of the ingredients with the mayonnaise. It is now ready to serve, or you can chill it overnight and serve it tomorrow instead. This is so crunchy and chewy, it is perfect contrast for a meal which is soft, or easy to chew. This recipe serves 6.
Linda, I was born near Clearfield, Pa and graduated from Clearfield High School in 1947, nearly sixty years ago. We still go back their occasionally. Christmas Greetings to Everyone, You know, Renee's story of her Christmas trip back to Clearfield stirred up some interesting memories for me and even though my Dad's family originates in Clearfield, I've never been there. But do you know that every time our family (just *two* kids and Mom and Dad went on a trip, I also had the back floorboards! And aside from the 'hump' in the middle, I have to say that was a pretty comfy place for a little kid on her Grandma's homemade quilts, playing with her toy horses). And that salad! My goodness! I knew it was traditional in *our* family and always wondered why my Mom fussed so at being asked to make it, year after year. But I remember now; it was my Dad's very favorite! He always told us girls that it had been a favorite of his Dad's and his Granddad's and (he had been told) especially of his GREAT Granddad's, who had been born and raised in Becaria, Clearfield County, PA! Hi Everyone. On the Centre County Rootsweb list we are talking about our Christmas memories long past of Centre County and I wanted to share mine but of course it is of Clearfield County so I hope you don't mind. I grew up in a military family. We were always pulling up our roots and moving from one country or state to another. I only ever spent one Christmas in Clearfield County and that is the one I want to tell you about. I was seven years old at the time. We spent 8 hours driving time getting there. Two adults and four kids in one car. We didn't have SUV's then, the closest thing to an SUV was a Volkswagen Minibus but we just had a car. Two kids on the back seat, one between Mom and Dad up front, and one on the floorboards in the back. That was usually me. Now you might think that was uncompfortable but in yesterdays cars we had more room on the floorboards and I never had to share. Eight hours of that. We got to Clearfield and took the old road back to West Decatur and finally the old wagon trail back to the family farm. Yes, we did get stuck on a little hill and I remember Mom backing the car up to the bottom of the hill and enough space to give her a running start then gunning the engine. She sure did knwo how to get up those old strippen roads. We get back to Grand Dad's farmhouse and unload the car and drug everything upstairs. The only heat source in the house was from the old coal stove in the kitchen and the only good way to get the heat upstairs was to open up the door at the bottom of the stairwell which was only done when you were ready to go to bed. That didn't make sense to me since it was SO cold upstairs but in those days you didn't question the adults. You just did what they asked. Except for the kitchen sink there was no indoor plumbing. The old outhouse was just beyond the driveway next to the grape arbour. It was quite the adventure on a cold winters night to make that last trip out there, no light in sight except for the one from the house. Christmas Eve we went to my Aunt Henrietta and Uncle Don's House for lunch. It was there we found the toy candies. Henrietta Vaughn was the best cook around and there was always something special cooking in her kitchen. Her favorites were Apple Dumplings and Waldorf Salad. To this day we don't have a holiday dinner without Waldorf. I've adopted the salad so every get together it's my job to make it. Her tree had small little birds all over it, you know, the antique ones with the fiberglass tails or any cute little bird they saw at the store. I did the same a few years back but on a white tree. VERY beautiful with ice blue lights. We went back to the farm and my older sister and I went out and cut a very small limb from an evergreen in Grandma's yard. We took it up stairs and put it in a glass of water. We thought it was our own private tree. Downstairs my Uncle Roy who was just a few years older than I was busy knocking down the Christmas tree. Not in the woods, no, Roy had tried to climb it after one of those small cheap wooden airplanes you got at the store and it lasted about half an hour. Crash, the tree came falling down right in the living room. Mom was pretty upset about that. That's about as much of that Christmas that I can remember. I'm sure if I sat and thought about it more long forgotten memories would surface. Our ancestors and loved ones from long ago may be gone, but as long as our recorded memories exist and the stories are past down they will always be remembered.
The subject is getting old but.... in 'Caldwell's 1878 ATLAS of Clearfield County' in the back of the book it lists Waterways. I did a quick estimate of runs and there were maybe 75, creeks maybe 20, rivers 1 or maybe 2, etc. On a map of Karthaus Township there is a UPPER THREE RUN which flows into the West Branch of the Susquehanna just after the town/village of Three Run. Three Run had a postoffice and grist mill and was later named Pottersdale after the man who owned the mill. Then in the History of Clearfield County by Aldrich is has a reference to Upper Three Run which says it is a fair sized mountain stream having several smaller tributaries. In the 'Commemorative Biographical Record of Clearfield, Centre,....' there is a bio of M.B.Conaway whose grandfather was of Irish birth & grandmother born in Germany. The Moshannon Creek was a dead creek in my lifetime but I'm sure when it was alive and full of fish, the fish would travel up many of the side creeks or streams, making them fish runs. I have a suspicion that the various "runs" in Central PA were so named because they were fish runs. Jim Nolan

Yes, that's how we used it in Lycoming Co... I grew up with the idea that a "run" was typically smaller than a stream or creek and might even be a seasonal phenomenon.... that a creek, even if it got low, would be there all summer but a "run" might only exist during the rainy months each year. I believe it was short for runoff, as in the water that would run off from a field after the spring rains or the runoff from a spring. This would result in a small stream of water that gradually became a larger stream as other runoff's would join with their flow of water. . Leah

Some of my ancestors are buried in Laurel Run Cemetery near Laurelton in Union County. I have never been there, but I have been told it is so-named because Laurel Run runs by the cemetery. I assume this is a year-round stream.
