DEVIL'S FOOD 1 cup brown sugar 1 cup white sugar 1/2 cup butter 2 eggs 1/2 cup cocoa 1 tablespoon vanilla 2 cups flour 1/2 cup sour milk 1 cup hot water 1 teaspoon soda Cream the butter; add the sugar and cream together until light and fluffy. Add the eggs and beat well. Mix and sift the dry ingredients excepting soda, which is dissolved in the hot water. Add the wet and dry ingredients alternately to the first mixture. Flavor.     3. In the event we aren't joking about all these substitutions - you need the sour milk in the recipe for the reaction it causes with the soda. At least that's what I've been told about these old timey recipes. And you don't need to let it get old, you just add vinegar (or even lemon juice, although I've never done that) to regular milk. This is also an acceptable substitute for buttermilk. I apologize in advance for being off topic!     2. I don't believe this subject is off-topic at all. After all, the old recipes often bring back good memories, and some fun times for all of us. Every dinner I ate at Grandpap Mellott's featured fried potatoes, canned beef, and a cucumber and onion salad. My grandchildren love the cucumber and onion salad, especially the dressing. My mother was a very good cook, and she had a mixed origin repertoire of meals. German, Italian, and PA Dutch. She was well-known for leaving ingredients out of her recipes. My son-in-law had never heard of potpie, and he never learned to like it at all. Now I have a son-in-law from the Cove area, and he seems to prefer sugar added to everything.     3. We're still sort of off topic, but . . . . I figured I'd share some old recipes from my local cookbook collection, in case somebody was a relative. I know I'd commit who-knows-what to get some of my family's old recipes. My mother decided in about 1985 that she had a heart condition (she did not), and cleaned out her recipe file, throwing away all recipes that called for more than a smidgen of fat. This was a woman who used to win prizes for her cakes, and her mother's pies and cream puffs were. . . . *sigh* I'll try to answer the questions I received onlist and offlist: When mom needed sour milk, she just added a teaspoon of vinegar per cup of fresh milk. 1/2 cup of cocoa wouldn't make the cake chocolaty enough for modern tastes. (Same with fudge brownies, and I know because I've tried a bunch of old recipes, trying to duplicate my mother's very dark chocolate brownies.) I couldn't find a recipe in the old cookbooks for chocolate cake using mayonnaise as the fat ingredient. I tried the whole sugar- and fat-substitute cooking thing when my older son developed a health program as a young teen (diabetic), and found that both substitutes, in quantities needed in dessert recipes, tend to have unpleasant side effects, which we won't get into here. I think I answered everything, but if I missed somebody's question, please email me offlist and I'll try to help you. No Waples? No Pollocks? No Kinkeads? No Lucases? Where's our Tyrone contingent? I found about 8 vintage-to-old Blair county cookbooks while cleaning out my cookbooks last night. I'm sure I have more, too. If you're looking for a recipe somebody from the '30s through the early '90s might have contributed to an organizational cookbook, let me know, and I'll see if I can find the name. ( I even have recipes Barb Hoenstine contributed, and she mostly didn't cook, but she liked to be on the Hollidaysburg Women's Club cookbook committees. <grin> ) If you'd like me to start a Blair County G?-Grandma's Favorite Recipes page on Blair Archives, and are willing to send me (offlist) transcribed family recipes with the (genealogical) info about the cook, I can do that. I think Cambia has some family recipes online. I just hate it that my family recipes are gone forever. Maybe we can save some for other folks. Okay, we're back to genealogy.
