If you are interested in tracing the Hawk name back into Germany, it may be worth exploring the surname Haux. The name translates to Hawk in English. I have Haux ancestors (also evangelical / Lutheran) who came from Wurttemberg, specifically Honou, but I believe there were Haux individuals in a number of locales in Wurttemberg. I don't know how consistent it is among parishes, but the Honou original parish records, which are available on microfilm through LDS, are incredibly detailed, already organized into family group sheets, and even cross-indexed!...best I've ever seen. The old German script in that locale is also similar enough to English script that it is quite easy to read. The earliest record that I found in my line was of Johann (Hanss) Jacob Haux, who was born 17 Mar 1701. The series of books "Wurttemberg Emigration Index" may also be useful; as I'm sure you know, a lot of libraries have it, and I think it's also on-line via ancestry.com.
