STOVIES Put some dripping or cooked fat cut small in a strong stewpan and allow it to become smoking hot. Slice an onion or a few shallots and fry. Peel the potatoes and slice them, and add to the pan with a little salt and pepper. Cover closely and cook gently for 1 to 2 hours, depending on the number of potatoes. When ready stir up from the bottom with a strong basting spoon. If desired left over meat may be cut up and added to the cooked potatoes.
