We have a pineapple yam dish which the Louisianians call "Sweet Potato Souffle." It is mashed yams with plumped raisins, pecans (not pee-cans, but pe-cahns), with a topping made of a roux of flour, eggs, butter, and topped with crushed pineapple, baked to a nicely risen, golden top.
