Jack, I don't know why you couldn't freeze cauliflower as you can buy it frozen. When I used to freeze veggies I would blanch them first to kill the enzymes, etc. With most veggies only do it for a short period so you don't remove the nutrients. Also drain well before freezing or you'll have a soft soggy veggie when you defrost the veggie. I like my veggies solid, not soggy. :) Hope this helps. Paula/Oregon
